Had a terrible craving for roast pork, so I hit Dicks Lechon truck at Waikele.

Then I hit the after-Christmas sales at Walmart.
They had these corn muffin boxes for 50 cents, so I bought 2 for a dollar.
I made some this morning and it seemed dry to me.

here is the modified recipe
I'll try this. I might go grab a few more boxes if it works out.
The modifications sound about right.
At 50 cents a box, it's a steal.
One box makes 6 muffins.

Ingredients
2 - 8.5 oz. boxes Jiffy Corn Muffin Mix
2 eggs
2/3 cup milk
1 cup sour cream
1/2 cup vegetable oil
2 Tbsp. sugar (optional)

Instructions
Preheat oven to 400-degrees.
Add the Jiffy Corn Muffin Mixes to a large bowl.
Add the eggs, milk, sour cream, vegetable oil, and sugar.
Mix all of the ingredients together.
Pour into a greased 9" x 9" casserole dish.
Bake for 25-30 minutes, or until cake tester comes out clean.

I'm currently trying to use up stuff in the freezer and pantry before NY eve party.
So all this talk about cabbage inspired me to grab a can of corn beef and make corn-beef cabbage like how my mom used to make when I was growing up.
That is old local style plantation days kine dinner.

Gotta use up the old can goods at some time.
I use vienna sausage as a dog training treat. It works on humans too.

For NY eve potluck there will be prime rib, shrimp scampi, coquitos, ...etc

I just made some plain comfort food tonight.  I'm always on the lookout for Japanese curry sales in the stores and recently S&B Curry was on sale so I bought the "Hot" one.

Carrots, celery, onions, potatoes and a green bell pepper from my garden.  Really simple, just chop up the veggies and follow the instructions on the Curry pkg.

My favorite "meat" that I like to add is shrimp.  So I put a whole bunch in there.

Hot rice.  That's it.  Heaven.

Only problem with dishes like these is portion control.  So ono I tend to eat more than I should.

When I came back from Vegas last week I gained 4 lbs.

Man, so fricken hard just to lose 4 lbs.......but to GAIN, hoo man no problem. >:(

Then my boy dropped by and brought dad some hamburger curry stew he made.
He also brought rice and hot cocoa but not mixed together. (Laie style)

For some reason your post made me remember my working days.  We were working at the Hawaii Convention Center.  When lunchtime came it was a mad dash to find something to eat for lunch.  And we only had 30 minutes to eat.

There were 2 lunch trucks on site.  One was very popular and had long, long, lines.  Admittedly, their food was awesome.  The other one was just, well, ok.

But to me they had the most awesome hamburger curry.  Best thing about it was there were no lines and because hamburger curry is pre-made, my order was prepared fast.

Hot, steaming hamburger curry, 2 huge mounds of white rice, mac salad, generous dashes of tabasco on the mac salad and curry.

I had my food and could enjoy while watching the other guys stress out in the long lines of the other food truck. :rofl:

Memories of great and simple hamburger curry. :shaka:

I know what you mean.  On my other thread I started about my Vegas trip we went to the new Fountaine Blue resort just to lookey see.  As was expected this resort is catered to the more affluent crowd.

Wifey and I ordered 3 hand roll sushi from their upscale food court.  Came out to $33 for three small sushi that looked like you described. :rofl:

Told wifey let's get da hell outta here and went back to the Cal, our home casino.  Told her let's go look for something to eat, I'm still kinda hungry. :rofl:

But yeah.  Tonight I plan to just cook hamburger.  I going brown it in a pan and drain the excess fat then add some Campbell's Cream of Mushroom soup to it and cook it with frozen peas and corn.  Add some chopped carrots.

Simple and ono with hot rice.  And homemade cucumber kim chee. :thumbsup:

maybe tomorrow or friday I am going to grill some ribeye
I spread butter on it before cooking and season with home made seasoned salt that a friend gave me
and either scalloped potatoes or rice a roni, and baked beans

Soup is my favorite type of food.  I like all kinds of soup.

The best comfort food. :thumbsup:

But if you like ox-tail soup, best to make it yourself.  Ox-tail soup is so expensive you need to take out a second mortgage.
