I'm traveling to AZ in a couple of weeks, and was wondering if it's possible for me to purchase a pistol there?
Since I'm not an AZ resident and Hawaii law requires 2 weeks for a background check for pistols, I was wondering if that still applied in AZ for HI residents traveling there.
Has anyone done this? Wondering if I should just bring a pistol with me instead.

If your intention is to use the gun in AZ, buying and using it there is not an option.
If you're shopping for a handgun in a state you don't reside in, you can purchase it and have the seller ship it to a HI FFL. After it arrives, you can apply for the permit to acquire. Your FFL will hold the gun until you pick up the permit.
So, the short answer is: take your own.

Currently no out of state resident of any state, can buy a handgun in another state and walk out of the store with it. You have to go through the process described above.

All private transfers of handguns must be performed via an FFL if the transferee is not a resident of the gun owner's state.
That includes family and friends "gifting" a gun.
