Title: Pork Chops - Discuss
Post by: drck1000 on September 22, 2020, 08:35:50 AM
Had been wanting to each pork chops, the fried, bar style version.

One of my favorites used to be from Home Bar.  That places closed, but the kitchen guys opened up a restaurant, but they rarely offer pork chops.

Picked up pork chops from Side Street Kapahulu last night and was quite good.  It was hot when I got home, not dry with a slight crust, which is perfect for me.  Side Street has been popular for their pork chops, but I just almost never eat there.

I also recently had the fried pork chop cubes (dunno the name) from Pitch Sports Bar.  With the vinegar/shoyu sauce, it was winnahs!  I'll have to pick up from there again.

Anyways, what's your favorite pork chop place?

My wife's kitchen because she gives me the edges with the fat.  I don't like pork chops with no fat on it.

You already said it, Side Street, hands down.

Yeah, me too.  I love the pork chops there.

Millions of years ago  ;) when I was a kid there was a place in Haleiwa called Jerry's.  Same as in the roast pork thread, Jerry's kitchen was a hell hole for the health inspectors.  Place was filthy and the overall place was run down, rustic, nostalgic.

But wow.  The pork chops.  When our parents would have the urge for us to all go eat out at Jerry's I would get all excited and my mouth would start to water!  Pork chops at Jerry's!!

I would joke to my brothers and sisters that the black flecks you see on the pork chop gravy was bits and pieces of cockroach.

Then we would shut up and chow down.......ONO!!

Agree with ya there. Gotta have fat for flavor and keep things from being dry. Though not really healthy.

Lei Lei's at Turtle Bay had (don't see it any more) a nice THICK pork chop with just the right amount of capers and black cherry.  :D
I lieka recipe called "I Love Pork Chops".
Get a thick (1-1/2") chop and split it  deep side ways.
Rub inside with salt, pepper and poultry seasoning.  (More fun when done with SO  ;) )
Stuff with chopped onion, celery and apple and bake covered.
Do not overcook.
Juicy and flavorful.

That's way too far a drive just for pork chops.  I've eaten there after golf, but never the pork chops.

1-1/2" thick chops?  Damn.  Yeah, pork chops can be difficult because of potential and consequences of overcooking.  I used to like to pan sear and oven finish my pork chops, then gravy.  That can be more forgiving with the gravy.  One of my buddies does pork chops on the grill and it's good.  I just think it's too difficult to get just right on a grill.

My buddy does a mean sous vide with some pretty "less choice" cuts of steak.  Comes out pretty damn good.

I make my own--I like as much dark meat on the center cut loins as I can get, well marbled of course.   O0

1" thick if I can get it.  Coat both sides with mayonnaise and cover with Shake n Bake.  Fry 1.5 minutes on both sides (2 minutes if you're squeamish about medium rare pork) then let it rest a couple.  Juicy!
