Koda farm is the maker of rice flour in the little white box. It has been used to make mochi in island kitchens for the last 100 years.

Yeah, I was thinking that....something like Hawaii.
I just get sad thinking about a bento without mochiko chicken.

More puzzling info.
Koda farms says they stopped growing rice and somebody bought the business.
But they also said they will continue to sell mochi flour.
The obvious question is, "what are they selling and where is it coming from?"

Very strange.

FYI-
I went to Times supermarket and looked at the asian food section for mochiko yesterday.
There are about 3 or 4 different brands available....including the metal-flavored brand.  :rofl:

Having said that, if you are an avid foodie, you know that when you change to a different brand of ingredient you need to re-test your recipe.

It's much the same as reloading ammo.
In fact, I was going to re-test some 45acp ammo with Bullseye powder because I have been using a very old can. (at least 30 yrs old)
I have a newer can (bottle) of BE powder about 10 yrs old. It would be interesting to see how much difference in accuracy and speed there is.
