If you use military grade encryption and abide by best practices when setting it up and using it, the vast amount of resources and time needed to break your encryption would only be used if they really, really wanted to for some specific reason.

Nothing is unbreakable, but the skills, computer resources and time required are not justifiable for 99% of communications if it was all encrypted.

Luckily, the increased use of encryption and VPNs makes it harder to pinpoint messages of interest.  Used to be mainly people with something they wanted to hide were that careful.  Now it's granny who doesn't want her bank account logins stolen.
