I cook lots of dishes with canned spam, corned beef, and tuna.
Couple of the cheapest fast meals I know are . . .
Tuna, peas, macaroni & cheese. Talk about a cheap tuna casserole.
My kids loved it when they were younger, basically because it was easy for them to help make.
Egg Foo Yung is also fast, cheap and easy (just like how some of you like it

).
Couple of eggs, bean sprouts, little chopped cabbage and carrots (or just buy the package of chop suey mix for a couple bucks), and add leftover chicken, pork or a couple shrimp.
Sauce is just diluted and thickened Oyster sauce.
Add a pot of rice and you have dinner and maybe breakfast.
Then of course there's corned beef and cabbage though corned beef ain't so cheap any more.

These were time saving life-savers as a single parent.
