That poi that I pounded made some excellent dessert. You ever went to Waiahole poi factory to grab that Sweet Lady?

We had the fresh pounded poi with Magnolia Ube ice cream.

Chili with rice and mac salad is the ultimate comfort broke mout food.  I literally cry if there is no tabasco in the house to put on the mac salad and chili.

I know I have a bag of frozen shrimp in the freezer.
Maybe I better use it before it gets too old.

On the other hand, I still have poi left.

For today, I made something like Portuguese soup but no beans. It was made 2 days ago which means it's perfect today. I never eat Portuguese soup same day. You need to give it time to release the spices. I  make my own spice blend. For this batch, I used smoked ham shank and added uala and tomato from the yard.

I made ox-tail soup yesterday.  Ono! :thumbsup:

But first allow me to rant about the price of oxtail.  My mother in law is a widow, but has commissary privileges and she is too old and feeble to drive.  So we bring her.  Anyway she bought us a 1 1/2 lb. pkg. of oxtail and it was priced at $8.49 a pound so it came out to like $12 and some change.

For oxtail! :grrr:  And this is commissary pricing.  Who knows how much this same pkg. would cost outside at retail. :shake:

And the hilarious part was the pkg. had 2 decent size pieces and about six pieces the size of quarters. :rofl:  For a fricken cow's tail. :rofl:

But again, came out ono.  Broke da mout.  The secret? 

There is none.  All you need is time.  Low and slow.  Because I'm retired I've become a self-professed master of oxtail soup.

My ingredients:

Chung Choy (Chinese preserved salted turnip)
Chinese Daikon
Chinese parsley
Beef Broth
Star Anise
Blanched Peanuts
Garlic
Ginger
Chinese Won Bok Cabbage
And of course the oxtails which require a 2nd mortgage to purchase.

I just put buttermilk marinaded wild boar ribs in the slow cooker. He was pretty gamey so the extra step was necessary. Will finish off in the oven w/bbq sauce tomorrow.

So Mrs Barrels got a little impatient with the slow cooker while I was at work and cranked it up, causing the meat to literally fall off the bone. No bbq ribs but thanks to her mom's suggestion of soaking it in buttermilk the kalua tastes amazing. Didn't need seasoning or anything.

I've been trying to avoid pasteurized dairy products but this is one case where I'll gladly make an exception.  :thumbsup:

I plan to complement the sauce with only veggies.  Thinking of adding corn, string beans, and zucchini to the sauce.  Maybe some fresh cherry tomatoes.

Sprinkle of cilantro on top with parmesen cheese. :thumbsup:

From what i've learned, there is the traditional Italian Alfredo Sauce without cream, and the American style sauce with cream.

These recipes have worked well for me.  The stuff in the jar is normally the creamy American style.





i've found Parmigiano Reggiano cheese at Costco in the specialty refrigerated section (at Waipio, it's in front of the dairy walk-in).

I didn't see any difference between that and the Parm i bought at the supermarket deli besides Costco being cheaper.

Costco also stocks the Bertolli jars of Alfredo sauce once in a while.  Walmart sells their own brand of Alfredo sauce that's much cheaper but still very good.

If you have the time to cook, the scratch recipes are best IMO.  If not, heating up sauce from a jar is a good alternative.
