Since looking into blades more recently, got back into more of the details, including different blade materials, shapes/grinds, etc. Like guns, there are many choices, each with pros and cons, depending on intended use. I usually look at blade shape, but have been looking closer at the material lately, and even more so after discussing with another forum member.
I own a range of knives in prices and blade materials. I also enjoy sharpening knives and have learned along the way that the blade material is important. Learned at first with diving knives a long time ago and how cheaper blades can be corrosion resistant, but practically impossible to sharpen or hold an edge. Now with the newer “premium” steels, they are great and retaining and edge, but need a little more effort to sharpen. I have a few in m390 and 20CV (added another m390 recently) that I’ve been testing and using more lately.
