I can tell the difference when i sharpen the knives. premium takes longer to sharpen. budget steel is faster to sharpen and seems like I can get them razor sharp faster
premium steel I can wipe off them grime easier
for my use, which is low level office use or just cutting cardboard, plastic straps for linen orders, cutting open mail, receiving mail orders at work, light cutting jobs. budget steel does just fine. but if I can get premium steel for a reasonable price then I'll; buy it
lately been getting some budget blades which are working out great. less than 100 or 50 bucks per blade. great prices for what I need them for
I also like premium blades just bc I like to collect them. it's just what I like to do

for daily use at work I like the budget steel bc that's all I need and its easy to sharpen
If I want to impress somebody then I bust out the premium WE knife or ZT. not so much for the premium steel but for the overall appearance of the knife. the premium steel is like the cherry on top

recently got 2 Sencut knives. both were less than $50 on amazon. 9cr steel. budget steel
now I consider the action on the knife, the blade shape, and the size of the knife and blade. then I consider the type of steel. some steels I just won't get, like D2 or 440A. but I look for corrosion resistance as well
