Title sums it up. Interested in building a home made mac. Lots of videos on youtube but still a little daunting.

Yep.  Piece of cake.  Anyone with a variety of Linux installation experiences should have no problems.

As with Linux, compatible hardware is key.

Apparently nvidia offers driver support for all of their cards to be run on a mac. I was looking at the new AMD ryzen line but not out just yet. Apple may be releasing new macs this summer though which doesn't make building my own quite as attractive. Currently though the macs haven't been updated for two years so a hackintosh is especially attractive in performance and price.

As with Linux, unless the hardware maker releases a driver for the OS of your choice, you can either write one yourself, or wait to sponge off the good will of the open source/GNU community.  Someone usually gets around to writing one, but no way to know when that will be made available to the project.

Off topic but what about just getting a Mac mini?
I think, therefore I am armed.

Much of the mac line is about 2 years old and they still charge close to the original price despite the hardware likely costing them much less than when it was new. The mac mini is fairly budget though in terms of performance. Some do build mini hackintosh computers though and they rival the Mac Pro currently for sale by Apple.

As with all computers, you need to have a list of applications you require to run on it.  Most people use the "as much power as I can afford" standard,
because they have no idea what the recommended requirements are for the software and hardware they want to use on it.

If you are one of those people, then it becomes a function of finances.  State a budget and any OS and connectivity requirements.

For most, simply running a virtual machine on a Linux host gives them the OS options they need all on one computer at an affordable budget.
