"People of Color". WTF is that? What does that mean? If a white family is at poverty level their "whiteness" is not a color? Is not white a color?
Actually, true "White People" are albino. They are relatively rare -- 1 in 17,000 worldwide, and 1 in 20,000 in the US. The White skin, hair and eyes are caused by a genetic deficiency that causes there to be no pigmentation in those cells. Thus, the correct term would be "People of No Color."

The people we see as "White" are more pink or tan. Only those who live away from sunlight could ever be truly White.
When I go to HPD for a permit, they put on my application "Tan" in the description. I'm about as Caucasian as anyone (Dutch, Irish and German ancestry), but the color of my skin is not "White."
About the time I was born, the term used for Blacks was "Colored People." "Black" was becoming a derogatory term. Never call anyone "Black" unless you want to get an ass whooping. They were Brown, not Black.
When I was very young in the mid to late 60s, Blacks were referred to as "Negros". The parts of town where they had their communities were the "Colored" or "Black" sections.
Later, "Negro" became offensive, and we started using "African-American." That's been popular for decades.
Then somehow, somebody decided Black is now the right term, even though it used to be "fighting words."
Recently, "People of Color" has become the "thing." Did anyone bother to tell them that "People of Color" is grammatically identical to "Colored People?" Just like "People of Blonde Hair" is the same as "Blonde Haired People."

Of course, the N-word is still a bad thing, unless you yourself identify as Black, colored or PoC. Then you can use the word in every sentence all day long.
We've gone full circle with these good-bad-good again terms to label the people associated with the Black race. I believe it indicates the hate and frustration many feel about their own race rather than what others feel. If you don't want to be Black, then being called Black is offensive. Cycle through the next term, and the next. It'll never get better until you are okay with who you are. When you stop identifying yourself based on your skin color, nobody can offend you.
Now, the agenda is to make Whites fell just as bad, or worse, about our skin color. White privilege, all Whites are racists, etc.
MLK wanted his kids to be judged by the content of their character, not the color of their skin.
We'll never be a color-blind society as long as the media and elected officials benefit from race issues and identity politics.
