I have a theory:

A primary election took place in Hawaii on June 27, 1959, and various statehood
propositions received many votes on that day. Following the certification of the
election results, President Eisenhower signed a proclamation on August 21, 1959,
declaring Hawaii to be the 50th state. This was known as Admission Day until 2001.

If the proposition to join the US passed in the June 27 election, and it took a week to certify the results, that places the official acceptance by the voters to join the union at July 5th. 

Eisenhower made it official from the US side of the process, but Hawaii made it official through a democratic vote officially certified on the 5th.

Since we already observe Admission Day (now called Statehood Day) on the date the proclamation was signed, the above has to be the rationale for the July 5th date.

Again, this is just my theory.

Ooohhh.....tomorrow I going check if the chickens hanging around the Mililani Mauka gulch by my house are still running around.

Hmmm. On second thought I think they will still be there.  They are more suited for soups and stews. 

Is there a National Chicken Papaya Soup Day?

Yay!!  By then the chickens by my house will number in the thousands :D........Not sure if my papaya tree can keep up.  Might have to go Times and buy their fricken expensive green papaya.
