To all of my brothers over there in the islands: Mele Kalikimaka and a very Merry Christmas from me & Mrs. Inspector!!!

I hope you spend the day with your family and loved ones tonight and tomorrow.

Me and the missus are going to spend the evening with Ohana watching old movies. And then tomorrow we will be cooking all day and then again spending the afternoon and evening with Ohana eating and stuffing ourselves and exchanging presents.

I have a prime rib roasting in the oven, a ham in the fridge with a glazed look, potatoes begging to get whipped, some green beans looking to mix it up with some mushroom soup and fried onion strings, and some canned croissants that are gonna get baked before it's all over!

I'm making Christmas Eve dinner this year for the family rather than going out.  Stewart Anderson's will have to find someone else to support them.  I have a feeling this will turn into the new annual tradition, replacing dinner out.

Merry Christmas to all, and to all a good night!



p.s.  Santa was unable to buy his annual supply of coal to put in the stockings of bad little boys & girls. 

This was a result of Climate Change regulations, Biden clamping down on coal production, and the general lack of affordable fossil fuels this year due to inflation and new energy policies.

We just finished eating, and my daughter's going with her husband and daughter to see some of the Mililani Christmas lights.

Before she tried the Prime Rib, I asked her to give her honest, critical review.  It's my first time ever cooking a prime rib, and I need to know what I could do better.

Before she left to go "light seeing", she said, "That was the best Prime Rib I've ever had in my life!"

That's all I needed for Christmas!     :geekdanc: :thumbsup:

I've  done Prime Rib for New Years this way EVERY year for decades

PERFECT PRIME RIB EVERY TIME

prime rib roast with or without bone (any size)
bottom round center cut
Preheat oven to 550°F degrees.
Make a rub of salt, pepper and garlic powder and apply to meat. Place meat in a shallow roasting pan fat side up.
Roast at 550°F at 5 minutes per pound for RARE, or 6 minutes per pound for MEDIUM and 7 minutes per pound for WELL DONE.
Turn off oven at the end of cooking time and DO NOT OPEN OVEN DOOR FOR TWO HOURS.
At the end of the 2 hours, remove meat from oven to slice; it comes out perfect every time.
Works the same with Roast beef. The next time you want an easy hands-off, tender and juicy roast, try this recipe - you won't be disappointed!

     Hardest thing to this recipe is not opening the oven door !
We put a chair in front cause some people can't read past their nose.

Usually have to double this recipe up and use muffin tins.
Yorkshire Pudding Recipe
•   Yield: Serves 6.
Add to shopping list
Ingredients
•   1 cup flour
•   1/2 teaspoon salt
•   1 cup milk
•   2 Tbsp melted butter
•   2 eggs, beaten*
•   2-4 Tbsp of roast drippings
Method
1 Sift together the flour and salt in a large bowl. Form a well in the center. Add the milk, melted butter, and eggs and beat until the batter is completely smooth (no lumps), the consistency of whipping cream. Let sit for an hour.
2 Heat oven to 450°F. Add roast drippings to a 9x12-inch pyrex or ceramic casserole dish, coating the bottom of the dish. Heat the dish in the oven for 10 minutes.
For a popover version you can use a popover pan or a muffin pan, putting at least a teaspoon of drippings in the bottom of each well, and place in oven for just a couple minutes.

3 Carefully pour the batter into the pan (or the wells of muffin/popover pans, filling just 1/3 full), once the pan is hot. Cook for 15 minutes at 450°F, then reduce the heat to 350°F and cook for 15 to 20 more minutes, until puffy and golden brown.
Cut into squares to serve.

I've used a method similar to Rocky prime rib, except I did turkey.

It's like imu kalua turkey.
