I love Kim Chee. But it's becoming so expensive to buy in the stores.
So I decided to make my own. After perusing the internet I tried making won bok kim chee. The first batch came out salty. Internet says the key is the rinse process after salting it to pickle the vegetable. And there is no cut and dry formula. All personal taste and experience.
I think that what makes it fun. The second batch came out perfect to my tastes. But I cannot remember what I did.

Then I tried making cucumber kim chee. Nailed it on the first try as far as my personal tastes. Broke da mout. Didn't last long, lol. I wanted to make some more but had a hard time finding Japan cucumbers in the store. So I going try use these keiki cucumbers they sell at Sam's Club.
I also made a batch with Head Cabbage. My wife likes this one cause she likes super crunchy types of kim chee.
I will need to visit the Korean market for more Chili Pepper Flakes and their version of Fish Sauce. They also used this salted shrimp paste that I haven't used yet. Hard to find.
Having fun making it and the best part is I can make huge batches for cheaper than buying it from the store.
