But yeah, I remember my kidney stone episodes.  I love leafy vegetables and had to cut down on those high calcium oxalate spinach which I love.

My soup had some Portuguese sausage and longanisa too. Basically, just whatever I had leftover.
Yesterday I tried using that Korean bbq spam to make musubi.

Your post inspired me to make pork watercress soup.  I bought some pork belly and water cress from Times.  Man, this biden-nomics is so full of shiite.  Everything is so expensive now.  A bunch of watercress is $6.99 a bunch.  I took out a 2nd mortgage to buy the pork belly. ;)

I made dirty rice (half brown, half white) to eat with the soup.

Which reminds me.  I gotta buy rice.  Did you see the prices lately? :grrr: >:(

Yeah.  Me too.  My mom raised us on rice because we were poor and rice was cheap back then.  It was a way she could feed 3 boys and 2 girls on a small budget.  She would make sure we each had a portion of meat, fish, or chicken and then would tell us to eat as much rice as we want to fill our bellies.

That got me addicted to rice and to some degree I still can't wean myself off it to this day. :rofl:

Please do your own research and I am not giving medical advice.

I have seen programs and internet searches that if you eat your protein and vegetables first (20 min), it sets your digestion to not convert your carbs (rice) directly to sugar, but a type that is better for you and absorb later i your digestion and better for your A1C.  So I try to eat some fruits or my salad first, wait, then eat my meal.

Also if you freeze (then reheating) your rice (or bread) for 24 hours, it change it to a better carbs, without sugar pikes.  So my deserts and snack are now found in the freezer, but like they all say, moderation.

I’ve been making more simple veggie-heavy dishes to stretch things out a bit. Sometimes I’ll add some natural food staples like lentils or beans into stews to make them heartier without needing as much meat—plus they soak up all the flavor, which is a win.

For dinner today, I’m keeping it basic with roasted veggies and a little baked salmon I had frozen. It’s a good balance, and I’ve found buying in bulk and freezing portions really helps with costs.

I do this also.  Helps with the weekly budget but also is a healthier option.

Today I going make Pok Toe-Foo.

I use the Hawaiian Electric recipe they have on-line.  Really simple to put together.

I add a little sake along with the other ingredients.  I ran out so I bought a small bottle at Times yesterday.

Girl cashier, young enough to be my grandaughter, asked me for I.D. :rofl:  (It's a requirement now but I still think it's funny.)

I miss KFC that used to be in Mililani.  Now I gotta travel all da way to Waikele if I want KFC.

We have chicken varieties.  That's what I like.

KFC, Popeye's, Raising Cane's, Jack in the Box,  .... they all have different spices, coating and flavor.

I first tried Popeye's in Biloxi, Mississippi, after college.  The spicy chicken hooked me.  I was going there 2-3 times a week for dinner and again for weekend lunch.

Holly Farms had a restaurant in my hometown.  The chicken was really good, but the potato wedges (Holly Taters) were the bomb!  I used to go there just for an order of Taters.  I could never order a chicken meal without also adding an extra side order of those Taters,

We also had a chain store called Mr. C's.  My mom used to go there more than KFC, but I liked KFC much better.

It's amazing how a simple product like fried chicken can have so many varieties appealing to so many different tastes.

So anyway, the recipe is quite simple but it was for like, 8 cups of cabbage.  I followed it to the letter and it was ok.  Got pretty close to KFC but I'm not sure I copied it 100%.

I made too much.  I googled and it said it will last in the fridge for about 5 days if stored correctly.  Only me and wifey so I'll be eating it till Sunday, LOL.

Problem is, I'm getting tired of it already. :rofl:

Definitely a one and done urge.  Next time cut the amount and recipe in half.

edited to add:  And tonight it's gonna be Chinese Beef Tomato.

With coleslaw on the side of course, whether it matches or not...... :crazy:

Made kalua pig and cabbage.  I use won bok instead of head cabbage.  One box of chicken broth and some oyster sauce.
