Thanksgiving Leftovers - How do you eat/prepare? Discuss

What is your favorite way to prepare Thanksgiving leftovers?  What are your favorite leftovers?

There are some foods that taste better the next day.  Beef stew, curry, etc.  For me, I really enjoy Thanksgiving leftovers.  I of course like the hot meal Thanksgiving night, but the "next day" prep was almost as much of a tradition growing up.

My mom used to shred the turkey and fry up with bacon and add a little of the stuffing.  Perfect when the outer layer of stuffing cubes were crispy.  Was one of my favorites on a cold Friday after Thanksgiving morning.

The traditional LOCAL leftover meal is jook with the leftover turkey and rice.

But during the past few years I've been unable to snag the bones.
Somebody else grabs it first or sometimes they buy boneless turkey.

The other fav is a turkey sandwich with gravy and cranberry sauce on leftover french bread.

I freeze excess rice and chum the neighborhood birds every day. They eat the stuffing too.

Day 1 leftover: chopped turkey and gravy over rice. Stuffing on the side. Chopped turkey heated in the gravy.
Day 2: day off from turkey.
Day 3 : Jook. Jook is like Jai or Gau in that it can taste totally different depending who cooked it or what house you’re at and what they add to it.
One of the ultimate comfort foods though.

Gravy is key, but it's not great the next day.

Turkey sandwich, both roast turkey slices and turkey salad is good.

My mom made jook growing up, but I never really liked it.  Nowadays, I've found that I like it, if it is tasty.  I used to joke it was old people food.  Guess I'm getting there.

turkey ala king or turkey corn scalloped. Both really easy to make just add mushroom soup gravy to the left over turkey and add corn or peas and carrots.

I love to make this also.  And good ole turkey soup.  I try to snag the carcass or at least compromise and get half or something.  Every year we fight as to who gets the carcass.

Looks like this year I get the carcass because King Caldwell the retard limits gatherings to 5.

Hail to the king.  May he lose in the primary for governor.

Don't do anything special with leftovers but my contribution to thanksgiving food is the stuffing waffle. Make stuffing mix and cook it in a waffle iron, comes out nice and crispy on the edges but moist inside. A little salty but works great for putting turkey and gravy on top. Just have to play around with the levels of broth so the mix isn't too dry or too wet.

This one sounds like could be onto something might have to try.
Except it would be day old re-purposed stuffing pulled from the belly of a turkey.

I have only tried it with fresh uncooked stuffing mix but I can't imagine it makes a big difference.

Could always try one and if it doesn't hold well throw in an egg to bind it better.

Just made Hapa-Haole Jook.

Chopped turkey, little bit gravy, can cream of mushroom soup with the water, day old rice, fresh finely sliced ginger, chopped up kimchi, salt and pepper.
Grinds

Only needed the chopped fresh green onion to complete it.

Happy thanksgiving everyone.

P.S. had leftover turkey cause got in-laws and immediate family and split weekends.
