Made kalua pig and cabbage.  I use won bok instead of head cabbage.  One box of chicken broth and some oyster sauce.
....
I had homemade corn beef hash with egg, also sauteed uala for green vegetable.
I might make kalua pig and cabbage tomorrow. 🤙

So tonight it is something I like to eat every 1000 years or so.

Sauerkraut with smoked polish sausages, carrots, and gold potatoes.

Supposed to use red potatoes but the ones at Times looked like shiite.

Saute the sausages then add the sauerkraut and let the juices from the sausages flavor the kraut then add carrots and potatoes, cover with a lid and steam until the potatoes are cooked.  I add a bit of soy sauce to the kraut to help it along.

Side note:  Longs has Spam on sale for $3.29 a can if you can call that a sale.  But they also have this Libby's canned Luncheon Meat on sale for $1.79.  Never tried this before so I bought one and it's not bad for $1.79. 

What I did was fry in a pan and burnt one side black as midnight.  Eat with hot rice.  Yo mout weel broke.

Screw the A1c.  Because it will hit da roof.

This was a historical display project for the Civil War period.
Basically,  it was a food that slaves of the south made using whatever they had available.  Most notably, they had black eyed peas, sausage and wild rice. This local version has black eyed peas, brown rice, potagee sausage, and vegetables. I also added some spinach that I grew in my yard. It came out really good. 😁

That dish was the basis for a New Year's Day tradition of eating black-eyed peas for luck.  Growing up in NC, we had black-eyed peas, cornbread, and ham on NYD.  The basic Hoppin John was black-eyed peas and rice flavored with pork -- hence the ham.

Since it's a stew, you can add any ingredients you'd find in other stews pretty much. like tomatoes, chiles, jalapeños, pork fat, onions, bell peppers, celery, or whatever else you have.

My mom and grandma put vinegar on their back-eyed peas, but i wasn't a vinegar fan.  They might also have collard greens with their peas and cornbread -- again, not a fan of collards.

I always like to try new and different types of foods.  I'll give this one a try.  Sounds easy enough to make and it has ingredients that I like.

I'm thinking it will go well with Hot Yellow Chili Peppers which I like to eat with food like curries and stews. :shaka:

The old recipes call for chili pepper to make it spicy, but I think I'm getting a little allergic to my homegrown chili peppers.

Tonight I have a craving to make mongo beans.

But instead of the traditional pork meat, I going use chicken.  I love making mongo beans with chicken.

Couldn't find bittermelon in the stores so I just going add some calamungai (moringa) leaves that I have growing in my backyard.

Only thing is I hate washing and picking the leaves off the branches.  So time consuming and if you're not careful in the washing process you will add those green inchworms that are hard to see to your mongo bean dish.

I dunno.  Maybe that is what's making the mongo taste so ono.....

I need some ideas for a main dish using spinach.

Gotta find uses for that spinach that grows like crazy in the yard.
Spinach dip was really good, but that's not a main dish.
This is good practice for a SHTF situation by utilizing what you have available.

no longer likes it so I lost the recipe. I could not find it on youtube but I did find an interesting Korean style

I'm just using the NOH brand char siu pkg mix.  I have it marinating right now.

The pkg. instructions call for cooking it in the oven.

I might deviate and after cooking it in the oven I'm thinking of putting the meat in a bowl, pour the leftover char siu mixture over it and steaming it in a big pot.

Came out good. Finely chopped some plain head cabbage and ate it with hot rice and the char siu meat.  Ate more than I should. :thumbsup:
